Alluring Chablis

When I’m scanning a restaurant wine list and see Jean-Paul & Benoît winking at me, I find it hard not to order immediately: one of my favourite domaines in Chablis. With a history stretching back to 1620, the Droins are one of the most established names in the region with thirteen hectares of vines covering seven Premier Cru vineyards and five Grand Crus.

 

‘Vaillons’ is one of the larger Premier Crus, the wines tending to be a bit more floral and delicate, although this has all the characteristic saline minerality that makes Chablis so alluring – a region where Chardonnay expresses itself as a sleek, finely chiselled number.

 

Enjoyed as part of a long lunch at The Ten Cases in Covent Garden, alongside fried squid and their brilliant soft shelled crab with avocado and jalapeño. The rack of lamb to share with a devastating BRICK of dauphinoise alongside was the real star.
